On the recent track day at Manfield, which was a total blast I might add, I've recorded some data:
Oil temps that stayed below 100 degC no matter how I pushed the car on the street, on the track crept up ever higher and in the afternoon as the air temps got hotter (it was a HOT day) the oil got to 120 degC, and climbing (but I let off at that point). So, I bought a larger oil cooler and hopefully that fixes it.
A probably related issue, or maybe it isn't an issue?, is that the engine used practically no oil during the track day. I suppose as the cylinders run hotter with the turbo now, the pistons/rings expand more, seal better, so less oil gets consumed? There was very little oil in the catch cans as well, so I suppose that would support the theory about the better rings seal. We don't want the rings to seal too well, though, do we?
The EGTs got to about 900 degC at times and this is on a conservative/rich AFR settings. I'll have to monitor this once I have the proper tune done.
The new front Yoko's held up REALLY well and upset the car balance from a slight under-steer on the old Toyo's to now quite an over-steer. I was able to remedy this by reducing front camber and stiffening up rear shocks.
The front tires grip was SO good that it destroyed the front wheel bearings. Hopefully, this was aided by the fact the wheel bearings have 150k kms on them and I would like to think the new ones will last me a while and not break too soon.
The EBC Green pads provided excellent stopping power on stock sized rotors/calipers. By the end of the track day I think though the pad compound hardened a bit and now on the street I need to put some heat into the pads before they bite as much as they used to when totally cold. I've got a set of EBC Yellows that I'll try next.

Bugger, I should have thought about it being the front.

Idk about the rings. I assume other people are running similar setups and are fine? If you're really worried you can check what the factory gap would be between and ask if that's acceptable. Could also just prepare another engine to go in, and maybe more boost ? Jk, perhaps both this and your EGT peace of mind can come from your water meth?

900c is quite high on EGT. This can only occur from running a lean mixture at top end. Do you have a wideband installed as would be best to check your fueling & MAP data prior to EGT temp spikes. Could also increase the WI injection at upper MAP levels. I’d aim for a max of 750C on EGT although hard to check during normal street driving.

Not an MR2, but I get a max of 700 to 740C when I’m giving my Subi a bit if stick. Otherwise it normally sits around 400 to 500C through the gears and settles down around 300C normal driving. The sensor is placed on #4 exhaust tube (running equal length headers & parallel fuel rail configuration). Fuel injectors are top feed 800cc SARDs, ECU is MOTEC M800. Most of the time I run in Tune 1 which is se5 for 280kW at all 4 wheels

In the meantime I've had a few jobs done...
Fixed the terribly faded headlights' lenses (replaced them) and used the opportunity to partially paint the housings black.
Installed rear "diffuser".

I need new rear tyres first. Lights up in 2nd in the dry now if stomping on the gas. Only have about 4/5 tread left across the width of the rear tyres thanks to Manfield.

Got the car fine tuned at the dyno:
~ 260hp/207ftlbs @11.5psi - at the hubs (hub dyno)
~ 229hp/178ftlbs @11psi - at the wheels (roller dyno)
Boost pressure was limited by the wastegate actuator spring. The tuner reckons there's more powah to be had (safely) with a stiffer spring. We shall see
